That was a bit obnoxious, eh? Saying “Hello” to THE world. That’s like saying that the whole world is reading ME… Aaaand, why isn’t it??
Althooooough, according to Mr. Google’s Analytics, I see 1 girl from Johannesburg and 2 boys from Russia dialing in. Um. Dialing in? What is this? 1992??
Speaking of 1992. I HATED Peanut Butter back in 1992. It took me like 16.4 years to finally give in. I was more about the Erokrem, known better as Nutella around these parts. While everyone was carrying aroundPB&J sammiches in their lunch boxes, I was whippin’ out a Macedonian-style sandwich as big as my headslathered with Erokrem. Best.Lunches.Ever. Thanks, Mom! ♥
Then, a few years later, something happened. Actually, college happened. College was about being forever broke and eating cheap. Cheap, as in scrambledeggsfor lunch ANDdinner, and Peanut Butter for dessert. The times that I DID havesome money laying around (how does money just lay around?), I spent it on partying. Err. I mean notebooks!
You should also know that I learned how to make cookies in college. Cookies on the cheap. A.K.A. Betty Crocker’s Cookie-Mix. Buuuut, I really WISH I had known about this Gluten-Free-deal way back then. I would have saved my thighs a few rubs and some carbs here and there, know what I mean?
Anyway. Peanut Butter Cookies remind me of College. So… yeah.
Now that I’m a grown-up (ewwwww! I hate admitting that!), and can make cookies from scratch, I try to include Peanut Butter whenever and wherever I can. Looking through my arsenal, I was inspired to make these cookies after seeing the Samoa Peanut Butter Bars that I made few months back. (Slurrrrp….) Followed up by a few searches, this is what I came up with.
Made with just 3 ingredients,maybe 5, these Peanut Butter Cookies are sweet, salty, gluten free and sugar free. BUT NOT taste-free! That’s what we’re looking for, right? It’s all about the taste, dang it!
With so few ingredients, every step in this recipe isimportant. YES it is. Cookies are temperaMENTAL. Got that? SO, don’t skip over the chillin’ part and then call me to tell me that the cookies didn’t work out, m’kay?? 😉

You need a binding agent in your gluten-free cookies recipe; otherwise, your cookies will fall apart. Some flour blends may already contain a binding agent, so double-check the list of ingredients. If it doesn't, you can add flaxseeds, xanthan gum, or guar gum.
One of the most common gluten-free baking tips is “let your batter rest”. Letting the batter rest gives the gluten-free flours and starches more time to absorb the moisture. In theory, it will turn your dry, crumbly cakes into delicious, moist masterpieces.
11- Make sure your baking soda and/or baking powder are fresh. These are the leavening agents in your cookie recipe and if they are no longer active, your cookies won't puff up and may spread more.
So it looks like that there are utilitarian reasons for the cross-hatching—to allow for even cooking—but it might have been passed along for nearly a hundred years for primarily aesthetic reasons, where the cross-hatching is more to identify the cookies as peanut butter ones, rather than to cook them well.
Gluten-free cookie dough is stickier than standard cookie dough, but chilling it can help. This is because cold dough is less sticky, and it doesn't spread as easily, too.
Gluten-Free Flour: For best results, use a high quality gluten-free flour blend that contains xanthan gum. King Arthur Flour Gluten-Free Measure-For-Measure Flour is my favorite gluten-free flour. I've also had good results with Bob's Red Mill Gluten-Free 1:1 Baking Flour.
Gluten-free goods tend to brown faster and take longer to cook through. So they need to be baked at a slightly lower temperature, for a slightly longer time. Every recipe is different, but in general, try lowering the temperature by 25 degrees and baking the item for 15 minutes longer.
Moisture – for some reason gluten-free cakes tend to get a little dry. Any gluten-free cake will dry out super-fast and get hard on the outside if it's not properly refrigerated and covered. I swear by always using buttermilk and adding a little more fat into the batter to compensate for the dryness.
While visual cues like the toothpick test and pressing the top of the cake will still help, the best way to determine if your baked goods are perfectly done is with a timer and oven thermometer. This is because gluten-free treats often look underdone and slightly wet inside after baking.
In gluten-free baking, we rely on xanthan gum to provide elasticity and stickiness in our doughs and batters. Since we don't have gluten present, we need something that acts as the binding agent for the flour, helps hold onto some moisture, and helps give the baked good some structure.
Cornstarch: This is my secret ingredient! It thickens up the dough to create the softest, chewiest chocolate chip cookies you've ever tasted! Baking Soda: Helps the dough to rise in the oven. Kosher Salt: Just a sprinkle of coarse salt balances out the flavor of these cookies and keeps them from being too sweet.
Gluten free flours often contain lots of water grabbing gums and starches so we have to ensure that there is enough water present to fully hydrate the gums and gelatinize the starches. When starches do not gelatinize, the baked good can have a gritty texture, and this commonly happens with flours such as cornflour.
Refrigerating the dough will give it more structure so the cookies spread less and hold their fork marks through baking. Cooling the dough also ensures that all of the ingredients are the same temperature: they'll bake more evenly and the flavors will meld beautifully. Heat oven to 375°F.
When you skip this step, your cookie dough may spread too much in the oven, resulting in thin and crispy cookies instead of the desired soft and chewy texture. For the best results, chill your peanut butter cookie dough for at least 30 minutes before scooping and baking.
Butter bleed typically happens when excess butter from the baked cookie below seeps upwards through the layer of royal icing, appearing as an oily stain.
Add extra liquid: Gluten-free flours tend to absorb more liquid than regular flour, so you may need to add more liquid to your recipes to compensate. This can help to keep your baked goods moist and prevent them from becoming dry and crumbly.
-You may have had too much moisture in the mix. Reduce the liquid by 1-2 tablespoons or add 1-2 tablespoons of flour next time. -You may have added too much xanthan or guar gum.
Dry, crumbly loaf- you may need more liquid (see above), fat or binder. Gluten free bread dough needs more fat than wheat bread dough whether it's oil, butter or something else. So if your bread is dry, simply add more fat to get a better crumb.
Gluten-free baked goods don't tend to stay as fresh for as long as those with gluten, so freezing is a great option. Gluten-free also tends to dry out quicker than gluten-filled baked goods. For best results don't wait longer than a couple of days after baking to freeze.
